I have made each of the following recipes numerous times - they're all GREAT:


Three Sisters Stew Absolutely DELICIOUS - all veg. Try it - you will LOVE it.


Tangy Apple Chicken Loaf. Sounds odd - but it's low-fat, low-cal and VERY tasty.


Mashed White Beans and Cauliflower and Leeks A DELICIOUS substitute for mashed potatoes. Seriously. Delicious and w-a-y better for you.


Tom Yum Soup HOT. DELICIOUS! My very favourite soup of all.


Thai-riffic Slow Cooker Chicken - SUPER easy (seriously - 10 minutes), inexpensive, healthy....gotta love it.


Slow Cooker Thai Chicken - a little more work...but mmmmm flavourful.


Vietnamese Fresh Spring Rolls
I get these all the time in Toronto. A variation of the Fresh Spring Rolls (below). Don't skimp on the greens. Delicious with the dipping sauce.


Crunchy Thai Salad with Chicken and Cashews
A complete hit! Only 15 minutes to prepare - but tastes gourmet. This is definitely going to be a regular dish for us.


Chocolate-Coffee-Beer Chili.
Yep - you heard right....chocolate, coffee and beer. It's SOOOOOO good! Best chili I've ever made.


Cilantro, Black Bean & Corn Salsa - AWESOME & healthy!....one of my staples - all year-round. Make a big bowl of it and eat it all week. I don't even use it as a salsa...I eat it with a bowl and spoon! (Althought it is very tasty with tortilla chips too).


Mediterranean Salad - tasty & healthy!....another one of my staples - although mostly in warmer weather (don't know why)


Broccoli to Die For - I hate broccoli - but I like this. Yummy.


Thai Shrimp Roll - mmmmm. A real crowd pleaser!


Fresh Spring Rolls - mmmmm. A real Janet pleaser.


Vietnamese Salad Dressing - great for dipping Spring Rolls. No added fat. Just flavour.


Jill' s Caponata - a bit of work...ok...a LOT of work. But SOOO worth it! Make a double batch and freeze it. Works well.


Savoury Zucchini Bites - great for on-the-run


Ronan's Tajine aux Pruneaux - Moroccan dish with lamb, preserved lemons and prunes. DELICIOUS!
Tajines aren't expensive (plain clay: approx $27). They are worth it for this dish. And you can sit it in the diningroom as a decoration when not in use.Warning: Sorry...the recipe is in French. When I get a moment, I'll translate it if someone needs it.


Sweet Potato Cake with Cilantro Yogurt - I made them. couldn't get them into patties...too limp. Leave out the flour and they'd make a great, exotic mashed sweet potato. Really really tasty.

NEW! Goat Cheese & Bacon Zucchini Strips - Easy and YUM-YUM-YUMMY! It too is not overly "unhealthy"....but didn't quite belong in the Super-Healthy section.


NEW! Bacon-Horseradish Dip - holy moly - is this decadent.


Zucchini & Petite Swiss Parfait (not a dessert!) - I haven't tried this yet - it's next. It looks like such a gooood appetizer!


Jill's Lettuce Wedge & Gorgonzola Salad - not healthy....but super-easy and ab-solutely SCRUMPTIOUS!


Poached Pears with Blue Cheese....from one of the LCBO Food & Drink magazines......WOW!


San Antonio Spinach Salad.....had this at the Delores Del Rio restaurant on the river walk in San Antonio. Absolutely de-licious!
